Summer Slaw with Lemon-Soy Dressing

1 (10 oz) package salad mix or coleslaw mix
3/4 cup Cliantro leaves, chopped
1/2 cup freshly squeezed lemon juice, (about 1 lemon)
1 tablespoon reduced-sodium soy sauce
1/4 cup extra-virgin olive oil
1/4 cup chopped peanuts, optional


1. In large bowl, combine coleslaw and cilantro.
2. In small bowl, whisk together lemon juice, soy sauce, and oil.
3. Add lemon mixture to coleslaw and stir to combine.
4. Top with optional peanuts and serve. (If making ahead, don't add peanuts until ready to serve. Cover and refrigerate for up to 1 day.)
