Zesty Potato Skins Two Stars

Zesty Potato Skins
32 oz new potatoes
1/2 teaspoon Garlic powder
3/4 teaspoon Chili powder
1/2 teaspoon Ground cumin
1/8 teaspoon Pepper
1 cup Cottage Cheese, low fat, low sod, undrained
1/2 tbsp lime zest
11/2 tablespoon Fresh lime juice
1 teaspoon Chives, dried
4 each Large black olives, sliced


1. Preheat oven to 450: F.
2. Cut each potato in half. Scoop out the center, leaving about < inch of potato inside of each skin. Cut skin into quarters. Lightly spray insides of skins with vegetable oil spray.
3. In a small mixing bowl, combine garlic powder, 1/2 teaspoon chili powder, cumin, and pepper. Sprinkle mixtures evenly on insides of potatoes.
4. Place skins, skin side down, on a baking sheet. Bake for 15 to 20 minutes, or until lightly browned.
5. Meanwhile, combine remaining ingredients except olives in a blender or food processor. Process until smooth.
6. Spoon about 1 teaspoon of the cottage cheese mixture on top of each potato skin and top with a slice of olive.
