Oatmeal Cookies with Dried Cherries
8 tablespoon Butter, unsalted
1/2 cup canola oil
11/2 cup Brown sugar
1/2 cup egg substitute
11/2 teaspoon Vanilla extract
3/4 teaspoon Salt
1 teaspoon Double acting baking powder
1/2 teaspoon Baking Soda
11/2 cup Whole wheat flour
3 cups quick-cooking oat
11/3 cup Dried bing cherries
1 cup Almonds, sliced


1. Preheat oven to 375 degrees F.
2. Place butter in large mixing bowl; microwave until melted, about 1 minute.
3. Add Egg Beaters, vanilla, salt, baking powder, and baking soda; continue blending as each item is added.
4. Add flour, oats, cherries, and almonds; stir to combine.
5. Using a tablespoon, spoon dough onto an ungreased cookie sheet; bake 12 minutes.
6. Transfer cookies to cooling rack.
