Healthful North African Carrot Cake

2 cups White whole wheat flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1/4 cup flax seed meal
1 1/3 cups sugar
1/3 cup vegetable oil
2/3 cup plain fat-free yogurt
2 each eggs
2 cups shredded carrots
1 each (8-ounce) can Crushed pineapple in juice, undrained


1. Preheat oven to 350 degrees. Coat a 13 x 9-inch baking pan with cooking spray; set aside.
2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt) in a large bowl, stirring with a whisk.
3. In a separate bowl, whisk together sugar, oil, yogurt, and eggs. Add to dry ingredients. Fold in carrots and pineapple with juice.
4. Spoon batter into pan. Bake 40 - 45 minutes or until a wooden pick inserted in center comes out clean. Cool cake completely in pan on a wire rack.
